This delicious recipe is easy to prepare, and makes an elegant dessert to serve warm or chilled. The recipe uses half a gourmet LAFAZA vanilla bean and a tablespoon of our pure vanilla extract to provide the rich vanilla flavor that pairs so beautifully with creams and custard dishes.
Cut the vanilla bean in half, return the unused portion to the jar. Split the remaining half lengthwise, and leave it on a cutting board or plate nearby the stove.
Crack 2 eggs into a medium sized bowl, then gently whisk the eggs until blended. Using a small spoon or knife, carefully scrape the vanilla bean “caviar” seeds from the inside of the pod and add into the bowl with the eggs.
Combine milk, sugar, cornstarch, and vanilla extract in a saucepan over medium heat on stovetop. Allow mixture to scald and whisk occasionally to prevent clumping.
Remove saucepan mixture from heat
Slowly add a few tablespoons of the mixture into the bowl with the whipped eggs and vanilla caviar. Mix well with a whisk. Then slowly pour egg mixture into the saucepan, and continue slowly whisking.
Return the saucepan to medium heat. Whisk gently but repeatedly until custard thickens (three to four minutes). Do not allow mixture to boil. Remove pan from heat.
If desired, pour the mixture through a fine mesh strainer to remove any egg whites not fully blended in to the dish.
This “Double” Vanilla Custard can be enjoyed warm, or chilled. Garnish with fresh fruit or berries, and enjoy!
